Mezcal
Mezcal is not as globally popular as tequila, although in recent years there has been a noticeable increase in its popularity, especially within the global bar scene. Mezcal is another distilled spirit, alongside tequila, that is produced from various types of agave. It is made in southeastern Mexico, in the state of Oaxaca, and is produced from specific agave varieties such as Espadín, Mano Larga, and Bermeja. One of the main differences between tequila and mezcal is that the agave used for tequila is steamed, while the agave used for mezcal is roasted, and it takes 8–9 years for the agave plants to mature.
Unlike tequila, mezcal can be made from several different types of agave and does not have a precisely defined geographical origin within Mexico.
